On Sunday night, I decided to give those zucchini pizzas a chance.
I used an over-sized veggie from my Ma's garden (thanks!),
threw on a few toppings and threw 'em on the grill.
Verdict is... super simple and not too bad.
Even the boys liked 'em.

A couple slices of zucchini were a little too thick to cook fully,
but the others tasted pretty good.
They aren't really filling enough for a full meal,
but they'd be great as appetizers.
And they're totally South Beach friendly
(not that we're on SB or anything...)
I was feeling a little iffy about the food we had left in the fridge.
Turns out, the food actually kept really well.
(We didn't open the fridge or freezer during the outage
or until ~15hrs after getting power back)
The only things I ended up tossing were the dairy products.
But anyway,
instead of trying out this yummy crockpot chili
and cleaning the house as I had originally planned,
(confession: the crockpot was still soaking from my last adventure)
my sister came over for some crafting
and I whipped up this little guy instead:
It was a hit.
When I was at Trader's earlier this week,
I sampled this little tasty from their sample station.
It was delish and super simple,
so I jumped on it.
All you do,
is bake the Trader Joe's Chicken Gorgonzola for 20 minutes,
chop it up, and serve it atop a bed of orzo.
Add a dollop of mango salsa and sha-BOOM-ya!

both went back for seconds.
Buy it. Make it.
It's yum.
I had high hopes for Thursday.
Instead of meeting friends out for Happy Hour,
we decided to meet at our place for appetizers instead
- homemade appetizers.
I was proud.
I'm not sure what everyone else was bringing,
but I was going to make our favorite BBQ meatballs
along with these cute little zucchini pizzas.
Then this happened.
Jeremiah and I ended up at Kaminski's instead,
But there's a lot more to that story.

Recipe #2: Cilantro Lime Chicken Soft Tacos
We sure do like tacos around these parts.
But we typically do ground beef, ground turkey, or fish.
These chicken tacos were super easy
and super yummy.
Since I was only feeding three people
(Jeremiah had a friend over tonight),
I halved the chicken in the recipe.
I still used the same amount of everything else
so there would be enough substance for the chicken to marinade in.
When I got home from work,
the chicken practically fell apart as I shredded it.
I made some smashed black beans,
sliced and diced some other fix-ins
and wah-lah.
Nom Nom if you ask me.
Not the healthiest meal in the world, I know,
but still better than Taco Bell, OTB and the like.
but I kicked off the "try a new recipe" piece last night.
I thought I might share the recipes and our opinions,
in case you're looking for ways to spice up your at-home meals.
Recipe #1: Hummus Melts.
I have to admit, I was pretty nervous when Husband came home starving
and Brother-in-Law asked 'what's for dinner?'
But I decided we'd try out a new recipe nonetheless.
They don't have any meat, so Jeremiah wouldn't necessarily call them a meal,
but they were surprisingly pretty darn yummy.
I made some with regular hummus
and others with an onion and chive hummus.
I'd recommend sticking to the regular.
I knew, Jeremiah wouldn't be satisfied with those alone,
(like how I blame it on the husband, hu..??)
so I accompanied them with a simple chef's salad, which was a good choice.
Since we ate the salads a good 30 minutes ahead of time,
we were almost full by the time we got to the melts.
Much more satisfying.
So.. what's the verdict?
Well, we didn't have to order a pizza, so that's good.
But we'll probably make these as an appetizer next time.
They'd go great with the BBQ meatballs I make.
Plus they kind of reminded me of spinach&artichoke dip
Much more appetizey if you ask me.
and yes, 'appetizey' is so a word.
Goal 11. The infamous Goal 11.
You know the one.
The goal billions of people resolute (er.. resolve?) to each New Years.
The reason gyms are absolutely packed in January,
February and maybe even March.
Yup, the "health" goal.
Well, here's the deal, plain and simple:
We're unhealthy.
and I'm sick of it.
We eat out more than we should.
We sit at desk jobs over 40 hours a week.
and well, things just don't feel like the used to.
(yes, 24-year-olds can naively say that... it's totally allowed.)
I'm going to be a bit vulnerable here and just say:
sitting/laying in certain positions has become disturbingly uncomfortable,
walking up our single flight of stairs at home
constitutes my 'exercise for the day'
and frankly, I'm fed up with making excuses.
"We don't have a gym in our complex like we did in our apartment"
just will. not. cut. it.
So... we got gym memberships.
And because I'm an all-or-nothing kind of gal,
I decided to kick off our slightly healthier (hope-it-lasts) lifestyle with a challenge.
I won't do this every week,
but for Week 1 I decided to attempt eating every single meal at home.
This may sound pretty standard for most people.
But just to give you a glimpse into my world,
we ate every single meal OUT last Friday, Saturday AND Sunday.
Disgusting I know, stop judging.
... but back to my goal.
Monday was relatively easy.
Since it was Labor Day,
we christened our new memberships with a mid-day workout
and had very little trouble eating small meals at home.
But Tuesday would be the real test...
Especially because I decided to spice up the eat@home plan
with another goal
(3 goals is way too many at one time! What am I thinking?)
...a goal of trying out a new recipe each night.
